I've been a fan of Cabot Cheeses for a number of years and always place a big order with them around the holidays for entertaining. I'm finding more and more larger grocery and gourmet stores that carry their products but the best way is still to order direct from them or through Amazon.
Cabot's Private Stock line of cheese are waxed white cheddars that have been aged 16 - 18 months. This places it at the low end in terms of Cabot's aged cheddars. This is a more delicately flavored white cheddar than some of their longer aged cheddars. Nice smooth texture that slices well without crumbling. Smooth enough to melt if you like. I like it on a burger actually for a really unique taste. Smooth and sharp but not too sharp.
