I've been a fan of Cabot Cheeses for a number of years and always place a big order with them around the holidays for entertaining. I'm finding more and more larger grocery and gourmet stores that carry their products but the best way is still to order direct from them or through Amazon.
I love Vermont Cheddar and this is one of Cabot's best. It's their youngest waxed cheddar cheese, aged up to 8 months. It's smooth light texture makes it an ideal cheese to cook with in recipes. I've added this to macaroni and cheese for a really fanatastic flavor. Way less sharp than their older Cheddars and Hunter's cheddar but still full of flavor and very diverse in it's uses in cooking or just snacking.
