excellent product August 10, 2008 I use this interchangeably for flour with my recipes. It works very well. My kids can hardly tell the difference in my cakes and cookies.

Beth's All purpose flour March 1, 2008 I have found this is the best all purpose flour to replace wheat flour. I use it for almost all recipes that call for wheat flour. My family can't tell the difference most of the time. The only thing I don't like is the cost. I have priced what it would cost to make my own though and there is little difference. I wish that Amazon would have the 5 Lb. bag that I can get from other sources.
Safe Flour... February 19, 2008 After being diagnosed with Celiac in 2007.... I was unable to eat so many things. Just the thought of finding good flour without wheat in it seemed like a daunting task. Thanks to this manufacturer, I am able to substitute this for wheat flour in most recipes. I thought I was going to go nuts without cake or cookies ever again... but now I can have them made with this flour.

This is a good flour (white rice). But what you may not know is that it is also the cheapest available flour for baking gluten free. You can usually find it in bulk at big grocery stores for $0.60-1.20 per pound. The other listed ingredients: potato starch, tapioca starch, and guar gum can also be purchased in bulk here on Amazon.
If you go to this extra effort, your $23 will go from 6 pounds of baking flour to 30.
