I tried at least 6 different Gluten Free flour blends before this wonderful mix. While it does contain both dairy and tree nuts, if these are not a concern for you...then stop shopping and buy this mix!
It is the perfect springboard for actual edible GF baked goods as well as some of the best pancakes and waffles around, GF or not.

I LOVE Pamela's Baking mix. I am able to make cookies, cakes and pancakes and my husband can not tell that it is gluten free. I have great results in that the texture and mouth feel is just like using regular flour or baking mix. I strongly encourage anyone with a good cookie recipe to use this.

Even though I grew up with Bisquick and love Bisquick, we are always looking for new and different pancake mixes...so I was excited to see all the rave reviews on this product. It wasn't until after I purchased it that I even noticed it was gluten-free.
Well, let me just tell you, this stuff is NO Bisquick. Bisquick still beats this stuff by a country mile (or six). I cannot fathom how other reviewers likened this to Bisquick or even better than Bisquick. NO WAY, NO HOW!
Now, the pancakes were certainly not BAD--and I could see how if you needed the gluten-free aspect, then the pancakes were probably even good. But to say they were better than Bisquick? Never. Bisquick pancakes cook up light and fluffy. Pamela pancakes were moist and dense and didn't even cook like regular pancakes (they don't bubble up like normal pancake batter, so we were a bit confused how to cook them). We even tried a few different cooking methods (temperatures) and none came out any better.
I did make a batch of chocolate chip cookies with the mix and those were good--they didn't taste any different than regular cookies made with flour. I am going to try a few of the other suggested recipes (on the box) to use up the rest because we certainly aren't going to make pancakes out of it.
So, I am giving the mix three stars. If I needed the gluten-free aspect I would probably rate it much higher. But as just your Average Joe looking for a pancake mix to replace Bisquick...I'd give this three stars and advise you to stick with Bisquick.

Pamela's mix is the best gluten-free baking mix! My non-gluten-free friends and family who have eaten muffins and breads I've baked with it can't believe they don't contain regular wheat flour. I recently had the opportunity to meet Pamela herself at a cooking demo in New York and she is a wonderful, down-to-earth person who truly cares about producing a quality, easy-to-use product for those on a gluten-free diet.
