After shopping around for natural pancake mixes I was finally satisfied with this product. Being a vegan I tossed around a few ideas for substituting the eggs in preparing the mix. I found that adding organic apple sauce, almond extract, water and soy butter to the mix makes a light fluffy and delicious pancake. Try it, you won't be disappointed.
