Amazon.com Review Update your kitchen with this handsome nine-piece cookware set from Calphalon. The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. Moreover, hard-anodized pots and pans are safe to use with metal utensils and under the broiler. Riveted on for strength, the stainless-steel Cool V handles stay cool during stovetop cooking and are oven-safe, as are the lids. Covering all the basics, this set consists of a 2-1/2-quart covered shallow saucepan; 8-, 10-, and 12-inch open skillets; and 3- and 7-quart covered chef's casseroles. The lid on the larger casserole is domed to send moisture and flavors back into the pot for succulent meat dishes. You'll find low to medium heat is the best temperature range for this fast-heating cookware. After use, wash by hand. Unexpected low quality October 9, 2008 I purchased a Calphalon commercial hard anodized set about 10 years ago. It has held up well even with my habit of dropping lids (yes, the lids do bend if you drop them on edge). Having used baking soda and taken the anodized finish off my 2.5q pot, I looked for a replacement. This set provided a 2.5q shallow pot, as well as the casserole and fry pan I was also looking for. Calphalon does tell you not to use baking soda in the pots. Ok, the shallow pot was not the one I wanted but was accurately described. However, the older set made in Toledo Ohio is constructed of much heavier aluminum. I am disappointed at the significant drop in quality. And, with china having less quality control, I am uncertain these pans will perform well and have the metal alloy content I expect. I will now look to All-clad made in the USA rather than continue to buy Calphalon.
Terrible Craftsmanship___EVERYTHING STICK TO THESE October 5, 2008 Terrible unfinished handles. Did a monkey with a file finish them off? They come in a white blank box with loose cardboard between the pots that have moved all around during shipment. The pots were all damaged and chipped. Dont waste your time with this set. Aweful......Everything sticks and good luck cleaning them..OUCH.
No good! October 4, 2008 I didn't like this cookware set because every type of food stuck to it. I cook curries and fry things but everything stuck to the bottom of these pans, which made cleaning a nightmare. I had to return it and I completely love the new cusinart cookware.
Excellent cookware for an awesome price!! September 27, 2008 I love this cookware. Hard-anodized does cook different than any other cookware, but once you use it and get used to it, you won't want to cook on anything else! I have a set of Calphalon non-stick and stainless that I still occasionally use, but prefer cooking on these.
Yes, you have to use a little oil, and yes, food can "stick" to it, but like everyone else has said, just let it sit and it will release when it is done. I have never had better looking, or tasting, sauteed chicken breasts. They come out golden brown, juicy...cooked to perfection!!
Cleanup is a breeze with these. I tend to clean as I go; letting the pot/pan cool down a little bit, then with some hot water, a little soap, and a sponge, they come clean with very little effort. Even when I have let them sit for a while or have burnt food to them (I almost always scorch rice, no matter what kind of pot I use), I have never had difficulty getting them clean. Yes, non-stick is easier to clean, but non-stick will never cook like these.

I got this set after trying one pan..I have to say I love them!! If the old calphalon was way better I can't imagine!! These are perfect, food does not stick..I have read some folks have a problem with that, but I haven't, just the opposite, I could clean these with a paper towel if I had to.. Even sticky stuff like cheese or stroganoff just washes right out no problem. I will buy more of the same!!
