I have been using this smoker for about a year. Works great. Do not rely on the thermometer in the lid. Buy a oven thermometer and place it on the rack with the food. Do not use charcoal but use charred wood. Big difference in taste. Weber is the macdaddy when it comes to grills/smokers.

I am 100% satisfied with the Smokey Mountain Grill! I'd recommend it to anybody! Assembling the grill from the package was very simple to do took UNDER 45 minutes to do. I have used it 4 times now and have not been disappointed with the cooking at all! I have done Pulled Pork, and ribs and the results are amazing. I use Kingsford charcoal as wood chips for the smoking. I use the Minion method and have had up to 11 hours on a cooking session. I bought 2 Barbecue books that I recommend PEACE LOVE and BARBECUE (Mike Mills) and Legends of Texas Barbecue (Robb Walsh) lots of good information in these books. Youjust can't go wrong with this smoker!

Like others said, great smoker and use the Virtual Weber Bullet site. Once you have the smoker started check the built in thermometer against another reliable thermometer. My built in thermometer was 75 degrees too low and there is no way to calibrate so you either have to do the math or replace the thermometer like I did.

Holds temperature very well for an uninsulated smoker.
Easily breaks down for transport.

Not just for the novice; a great backyard smoker for a beginner to a seasoned veteran.

If your looking for a first smoker do not hesitate to order the Weber over the cheaper department store smokers, you will not regret it.



2 out of 5 stars Water Pan and Charcoal mismatch   February 27, 2010

I have two problems with my newly purchased WSM.
1. The water pan is too deep vertically, almost eight inches deep. When it's in place over the charcoal it dips down and you can't see and therefore service the charcoal on the back side. It would have been so easy for them to creat a water pan with a flat bottom, as on the 22.5 WSM. I'm surprised that according to Weber service I'm the first to complain about this. If you've thoughts, let me know.
2. This is a fundamental problem I have with most charcoal bullet smokers that rely on the water pan to sustain a temp. of 250F, or whatever you wish for low temperature smoking. I think an awful lot of charcoall is burned and basically wasted heating water to the simmer to maintain the temp.
3. There are no handles on the smoker body. If you have to lift the body out to add charcoal for a very long smoke it's difficult. That would be helped greatly with handles attached to the sides of the body.
If I had it to do again I'd strongly consider purchasing either an offset smoker, or a gas smoker. My wife won't allow the offset in our patio.
