Very useful pan, but does not cook evenly November 1, 2009 N. Monti I was so excited to receive this skillet. It can cook a lot of food at once and is very low maintenance. Food stuck at first, but after about 2 uses it was seasoned and non-stick. My only disappointment is that it does NOT distribute heat evenly. I tried making pancakes this morning and there's room to make 3 at a time, but they are not evenly browned. They each have a defined, curved border where the pan is cooler. Still tasted good!
Must have for every kitchen October 20, 2009 J. Garcia (TX) The pan came in excellent condition and ready to cook right out of the box. I've used it everyday since the purchase to cook stir fry, eggs with plenty of bacon fat, bacon, ground beef, and sirloin. it feels good to know the only thing coming off the pan and in my food is all natural iron.
Good, old cast iron October 17, 2009 J. Burns I hesitated to buy cast iron cookware because of the weight. Although this is a pretty heavy skillet, it's easy to lift because it's been engineered properly - the handle is short, so it's closer to the center of gravity, so to speak, and the tab on the opposite side makes it very easy to pick up for this geezerette with arthritic hands. I love the almost-straight sides, and the depth. Ths first thing I used it for was to bake a cake, and it was perfect! The instructions say to keep the heat fairly low, so it doesn't get too hot. I have an electric range that takes a long time to heat up, so I have found that I do need to turn the heat up to medium high to get the pan properly heated. I actually bought this pan for cooking pancakes and bacon, but it's great for lots of things. Not sure I'd use it for recipes with delicate ingredients, like cream, because it doesn't cool off quickly, but it certainly has a permanent place in my kitchen.
Great skillet October 12, 2009 Z (VT) It's a really good skillet for the price. Only thing is that I should have gone for one size smaller, it's a bit big for just two people, but will be perfect for when we have company or kids! Rather heavy though and you definitely need pot holders once you start cooking with it, impossible to handle otherwise. Also rather high maintenance as you can't wash with soap or put in the dishwasher so be prepared to scrub and oil...which can be awkward because of size and weight. If you don't mind all that it's a great skillet!

The pan is well built, but barely 12 inches in size. The surface on the bottom inside of the pan is not smooth, but sort of rough, unlike my previous skillets, so stuff wants to stick to the bottom more than previous iron skillets. Even so, I guess it was worth the money.
