The result is cutlery that is superb for straight slicing without sticking but that still works into a great rocking motion for speedy mincing or chopping. Not to mention that Coppertail knives are the cutlery of choice for cookbook author and Food Network host Rachael Ray, who has a great deal of clout with home chefs. This box set packs two Coppertail cook's knife/vegetable chopper knives. The first has a 5-inch blade for handling smaller fare, such as halving cherry tomatoes or slicing mushrooms. The longer 7-inch blade is ideal for bigger jobs, such as chiffonading spinach or slicing large tomatoes. Knives are made of a single piece of high-carbon Japanese stainless-steel alloy so there are no gaps where food particles can get caught and no plastic pieces or rivets that can potentially fall off over time. The strength of this steel allows for an extremely sharp cutting edge that requires minimal maintenance to keep its sharpness. The ergonomically shaped handles on this cutlery feel lightweight yet properly balanced and provide a comfortable grip through hours of cooking. Handles are curved but have wedge-shaped angles on the top and bottom to reduce the amount of squeezing and hand strain and to prevent slipping when hands are wet or oily. Additionally, these knives have a notch just beyond the bolster that comfortably cradles the index finger and are the only brand with a counterbalancing copper insert at the ends to maintain the ideal weight between handle and blade. Best, most usedful kitchen knives made! December 16, 2009 S. Littlefield (Missouri City, TX USA) These are the best all-purpose knives I've ever owned. I've bought two sets so we have a set at home and at our weekend retreat. I've also bought two sets for our daughters who love to cook and they love them, too. You need to be aware that these knives are VERY SHARP (as they should be) but with proper care in their use and handling, they will reward your culinary efforts without any problems.
Bad quality and service December 4, 2009 Mac Aladdin (Houston) I was simply preparing some garlic and the large knife of this set snapped right in two. I have tried to get warranty replacement, but I called the number on Furi's website and a guy answered "Hello?" and gave me some other number that went nowhere. Simply put, the "lifetime warranty" does not exist.
Excellent Knives September 22, 2009 J. Qi (Seattle, WA USA) I've owned these knives for probably a year and a half now. They're still the main knives we use. They're sturdy, heavy but not cumbersome, and extremely sharp. With these two, you're pretty much set for any kind of cutting you may require in the kitchen.

The knives come with a small copper stub on the handle. This is for re-balancing the knives once you've used it and sharpened it enough times to require a re-balancing. The bamboo case that it comes in is pretty, but not much use. It's not very useful for storage since you're better off hanging your knive on a magnetic rack. They're great to look at, so there is no need to hide them.
To keep your knives sharp, just make sure you sharpen them regularly. You don't need a automatic knife sharpener. I have a AccuSharp 001 Knife Sharpener which works great and has kept the blade like new. It's very cheap and you can find it on Amazon ($10).
I never knew . . September 22, 2009 Brian (Rochester, NY United States) Never knew how much of a difference decent knives could make in food prep. Was unsure of the all metal grip. It certainly hasn't been an issue. I almost exclusively use the larger of the pair, while my wife prefers the smaller knife. To tell you the truth, I wish I had another about 2 inches longer. The blade shape is ideal for rocking and getting a quick chop and it's also tall enough so ones knuckles aren't constantly banging on the cutting board. I really love these knives and would get a 9 inch in a heartbeat if it were available. Maybe I should look?
