Guajillo Pepper Paste. One of Mexico's most frequently used peppers, Mexichef's Guajillo Pepper Paste is brimming with a mild, sweet heat. The delicate flavor will enhance dishes from sauces to soups. Enrich sauces for meats with its rich red color and sweet mild heat. Spice up a seafood pasta dish with a cream-based Guajillo sauce. Prepare pozole, menudo or your own chorizo. Excite chile con queso with Guajillo Paste served with warm, crisp tortilla chips. The chile guajillo is related to the pulla pepper. Shiny deep orange-red with some brown tones. Measures about 4" to 6" long and 1" to 11/2" across. Has a green tea and steamy flavor with berry tones; distinctive fruit and citrus qualities and thin fleshed. A little piney and tannic, it has a mild sweet heat. Commonly used in salsas, soups, stews, and chile sauces. Great accompaniment to all seafood, specially shrimp and scallops. Grown in northern and central Mexico.
